From November 3rd to 7th, Vinum Ibiza will launch the first edition of its seminars for sommeliers and hospitality professionals with a passion for wine. With over 10 years of experience in wine education, importation, and distribution on the island, Vinum Ibiza will present a series of seminars this autumn that will include tastings, masterclasses, and special guest speakers.


Objectives

The aim of these seminars is to train and support hospitality staff—including sommeliers, F&B managers, directors, and waitstaff—who want to deepen their knowledge and improve their skills in wine service.

With a long-term vision, the seminars seek to foster a more profound understanding of the world of sommellerie. Over the course of one week, Vinum Ibiza will present a series of sessions covering essential topics in the wine industry. This training will help participants explore the latest trends and identify the current weaknesses in Ibiza’s wine offerings.

Vinum Ibiza’s goal is to share the international evolution of modern wine culture through immersive training sessions that will enhance the sommelier’s overall knowledge and open up new discussions around wine—from wineries and glassware to cooperage and marketing.


Vision

Sommeliers in Ibiza already have access to more general theoretical and practical training (such as WSET, the Balearic School of Hospitality, online programs…).
Vinum Ibiza’s vision is to become a leading reference in showcasing market changes and innovations, through a deeper and more critical approach. All training will be delivered 100% by wine industry professionals.


Speakers & Experts

Each year, Vinum Ibiza will offer a new series of 5 seminars hosted by 5 leading speakers over the course of one week.
The first edition will feature:

Goran Krstanovic – a sommelier with 23 years of experience in the hospitality industry across Austria and Spain, has worked in some of the world’s most renowned restaurants. He participated in the first edition of the “LVMH Vins d’Exception Industry Leaders Retreat.” He is the founder and CEO of the wine distribution company Vinum Ibiza.

Brice Michaud – Sommelier with experience in France, Portugal, and Spain. He is the Best Sommelier of the Balearic Islands 2025 (ABS) and Best Sparkling Wine Sommelier in Spain 2024 (Sparkling Wine Master). He’s ranked in the Top 10 Sommeliers in Spain 2024 (UES) and holds the ASI Gold Diploma from the International Sommelier Association.

Sergio Gonçalves, fourth generation at the helm of the Portuguese cooperage J.M. Gonçalves and its branch Etna France, produces barrels in the Douro Natural Park with Bureau Veritas certification, using wood from the finest forests of France. With an annual production of 13,000 barrels, they are pioneers of the toasting method with volcanic stones.

Cesare Bussolo – One of Barolo’s most talented winemakers and a student of the legendary Roberto Voerzio. Cesare applies the same philosophy to his own wines: organic farming, indigenous yeasts, and minimal intervention in the vineyard and winery. His single-vineyard wines from La Morra are expressive, age-worthy, and truly promising.

Jérémy Arnaud – Founder of the International Association of Terroir Rosés, a movement launched in 2021 with Philippe Guigal as current president. Their mission is to raise awareness and recognition of terroir-driven rosés. With over 60 affiliated wineries, the association has also created the first aging cellar dedicated to rosé wines.


Seminar Format

The seminars will take place over five consecutive days, from Monday to Friday, and will include various formats: guided tastingsmasterclassesblind tastingshands-on workshopslecturespresentations, and debates.

Each speaker brings a unique 360° perspective on the wine world, covering themes such as:
geology, corks, glassware, food pairings, cooperage, oenology, history, marketing, sommellerie, viticulture, writers, critics, importers, and more.


Seminar Schedule:

Day 1 – Burgundy: Understanding vineyards, quality classifications, and labels
with Brice Michaud

Day 2 – Sommellerie: How to introduce today’s sommelier trends to island clientele
with Goran Krstanovic (includes guided tasting)

Day 3 – Sergio Gonçalves will present his cooperage and the methods for producing the ideal barrels for the finest wines, with toast levels ranging from traditional to innovative.

Day 4 – Terroir Rosés: Introduction to the International Association of Terroir Rosés
with Jérémy Arnaud (includes guided tasting)

Day 5 – Barolo: Discover the Barolo region and Cesare Bussolo’s wines
with a tasting and a surprise element
